Caldo Verde (Green Cabbage Soup) |
...this soup is different from Portuguese Caldo Verde. In Brazil we prefer to use collard greens, instead of green cabbage from Minho.

Caldo Verde (Green Cabbage Soup, using Collard Greens) Ingredients: 1 bunch collard greens chopped onions 6 potatoes, finely sliced half a garlic sausage olive oil water, salt and pepper Directions: Brown the chopped onions in the olive oil. Add the finely sliced potatoes and cover with water. Season with salt and pepper. When cooked, take out the potatoes. Mash them with a fork and put them back into the broth. Add 10 ml olive oil. When it boils, add the couve (collard greens) cut into thin strips. Boil for 5 minutes. Serve immediately in individual bowls, adding two slices of garlic sausage per person.
